- 4 boneless, skinless chicken breasts
- Salt and pepper
- 1 cup all-purpose flour
- 2 tablespoons olive oil
- 1/2 cup unsalted butter
- 8 ounces sliced mushrooms
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 2 tablespoons chopped fresh parsley
- 1 tablespoon of dried oregano
Instructions
Instructions:
- Season chicken breasts with salt, pepper, and oregano. Dredge in flour, shaking off excess.
- In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for 3-4 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add mushrooms and cook for 2-3 minutes, or until softened.
- Add Marsala wine and chicken broth to the skillet, and bring to a simmer. Cook for 2-3 minutes until the sauce has thickened slightly.
- Return chicken breasts to the skillet and spoon sauce over them. Sprinkle with chopped parsley and serve.
Notes
Note: You can add some fresh oregano instead of dried oregano if you prefer.
