  • 4 boneless, skinless chicken breasts
  • Salt and pepper
  • 1 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter
  • 8 ounces sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon of dried oregano

Instructions

Instructions:

  1. Season chicken breasts with salt, pepper, and oregano. Dredge in flour, shaking off excess.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for 3-4 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add mushrooms and cook for 2-3 minutes, or until softened.
  4. Add Marsala wine and chicken broth to the skillet, and bring to a simmer. Cook for 2-3 minutes until the sauce has thickened slightly.
  5. Return chicken breasts to the skillet and spoon sauce over them. Sprinkle with chopped parsley and serve.

Notes

Note: You can add some fresh oregano instead of dried oregano if you prefer.
