- 4 chicken breasts, pounded to an even thickness
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 1/2 cups breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil, for frying
- 1 cup marinara sauce
- 1 cup mozzarella cheese, shredded
Instructions
- Preheat your oven to 350°F (180°C).
- Set up a breading station with three shallow bowls. In the first bowl, place the flour and season with salt and pepper. In the second bowl, place the beaten eggs. In the third bowl, mix together the breadcrumbs and Parmesan cheese.
- Dip each chicken breast into the flour, coating both sides. Shake off any excess flour, then dip the chicken into the eggs, making sure to coat both sides. Finally, coat the chicken in the breadcrumb mixture, pressing gently to help it adhere.
- Heat a large, oven-safe skillet over medium heat. Add enough olive oil to coat the bottom of the pan. When the oil is hot, add the breaded chicken breasts and cook until they are golden brown on both sides, about 2-3 minutes per side.
- Once the chicken is browned, remove the pan from the heat and spoon the marinara sauce over the top of the chicken. Sprinkle the mozzarella cheese on top.
- Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve the chicken parmesan hot, with additional marinara sauce on the side if desired. Enjoy!
