Fruitcake cookies are a type of cookie that is made with a mixture of dried fruit, nuts, and spices. They are often rolled in powdered sugar or decorated with a glaze or icing, and are a popular holiday treat.

  • Total Time: 32 mins

Ingredients

Scale

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup mixed dried fruit (such as raisins, currants, and candied citron)
  • 1 cup chopped nuts (such as pecans or almonds)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

Preheat your oven to 350°F (180°C). It is recommended to cream butter and sugar until they are light and fluffy. Adding the eggs one at a time and the vanilla extract afterward should result in a smooth mixture. Prepare a separate bowl with the flour, baking powder, and salt. Mix the dry ingredients into the wet ingredients in stages until thoroughly combined. Stir in the dried fruit, nuts, cinnamon, and nutmeg.

Spread the dough on a baking sheet lined with parchment paper by heaping tablespoonfuls. The cookies should be baked for 10-12 minutes, or until they turn a light golden color. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. If desired, you can roll the cookies in powdered sugar or drizzle them with a glaze or icing before serving. Enjoy!
