Egg curry is a great meal for those who are looking for something quick and easy. The dish is made from eggs, potatoes, and other ingredients that are commonly used in Indian cuisine. The dish is usually enjoyed with rice or bread.

This egg curry recipe is one of the easiest curry recipes to make, and it tastes just like the Indian food you’re used to.

The only things you need to buy for this dish are cilantro and garlic. You can also use cream instead of milk, but then you may want to add some coconut milk or yogurt when serving your egg curry.

There are a few ways you can make egg curry. The easiest way is to add some tomato paste and chicken broth to the eggs, then scramble them together. When they’re done, pour the mixture into your curry dish and heat over medium-high heat until the eggs are done. Then, serve your egg curry with garnishes like cilantro and green onions!

Ingredients

  1. Egg: 6
  2. Chopped Onion: 2
  3. Chilly (Green Chili): 4
  4. Ginger paste: 1 teaspoon
  5. Garlic paste: 1 teaspoon
  6. Tomato: 2 (grind in a mixer)
  7. Cumin: 2 pinches
  8. Garam Masala
  9. Coriander leaf:
  10. Chili powder: 1 teaspoon
  11. Turmeric powder: 1 teaspoon
  12. Coriander powder : 1 teaspoon
  13. Garam masala: 1 teaspoon
  14. Salt: as per taste
  15. Oil: 100 grams
  16. Mint leaf

Instructions

  1. Boil the eggs for 10 minutes and then cool them off.
  2. Peel the eggs and set aside.
  3. Heat oil in a pan on medium-high heat, then add mustard seeds and let it splutter for about 30 seconds.
  4. Add curry powder, coriander powder, red chili flakes, turmeric powder and salt and mix well with the spices until they become fine powder consistency.
  5. Add coconut milk and mix well again until all the ingredients are combined well into one smooth mixture without lumps or pieces of egg shell in it, then add boiled eggs into it and mix again until all ingredients are mixed up together evenly. Then add water if needed to make a smooth gravy consistency sauce before serving with rotis or naans!

Notes

Before frying the egg, cut it a bit so that the masala fits inside. Cook the masala well over medium heat. Adding coconut to the sauce will change the flavor and enhance your dish.
