Ingredients

  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 3 large eggs
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

 

Cream Cheese Frosting

Ingredients:

  • 8 ounces of cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition.
  3. In a separate bowl, mix together the cocoa powder, food coloring, and vanilla extract. Add this to the butter mixture and mix well.
  4. In another bowl, whisk together the buttermilk, flour, baking soda, and salt. Gradually add this to the butter mixture, mixing until well combined.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
  6. Bake the cakes for 25-30 minutes, or until a toothpick inserted into the center comes clean. Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.

Notes

Instructions:

  • Add the powdered sugar, 1 cup at a time, beating well after each addition.
  • Stir in the vanilla extract.
  • Spread the frosting over the cooled cakes, then stack the cakes on top of each other. Serve and enjoy!
